Cottage Cheese Pie Recipe

This delicious cottage cheese pie recipe has a tasty apple topping is worthy of a try!

Ingredients

Crust
1 1/4 cups all purpose flour
1/4 teaspoon salt
1/2 cup butter, chilled and diced
1/4 cup ice water
(Makes one 9-inch crust)

Cottage Cheese Pie
1 cup cottage cheese
2 rounded tablespoons all purpose flour
1 cup granulated sugar
1/4 teaspoon salt
2 eggs, beaten
2 cups milk
1 teaspoon cinnamon

Apple Topping
3 apples ( Spartans and/or Golden Delicious)
1 Tablespoons lemon juice or juice of 1/4 lemon
1/4 cup brown sugar
1/2 teaspoon cinnamon
1/8 teaspoon salt
1/2 Tablespoon flour
1 Tablespoons butter

Directions

Crust

Preheat the oven to 450.

In a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs. Stir in water, a tablespoon at a time, until mixture forms a ball.

Roll dough out to fit a 9 inch pie plate. Place crust in pie plate. Press the dough evenly into the bottom and sides of the pie plate.

Cottage Cheese Pie

Use an electric mixer to blend the cottage cheese in a mixing bowl until creamy and smooth.

Next add in the flour, sugar, salt, and eggs.

Mix until smooth.

Add the milk and stir it in slowly.

Pour the custard into the pie shell and sprinkle with cinnamon.

Place the pie into the oven, but put a tray lined with aluminum foil on the rack below as this pie sometimes bubbles over.

Bake for 10 minute in the preheated 450 degree F. oven, then reduce the heat to 300 and bake at least another hour.

It middle will be jiggly when done, but will firm up as it cools.

Once cooked set out on a cooling rack. Once the pie has cooled, spread the apple pie topping on.

Apple Pie Topping

Quarter, peel, core and slice the apples into little chunks.

Add the lemon juice and use a spatula to stir into the apples. This will help to keep them from browning.

In a small mixing contained stir together the dry ingredients.

Using a spatula, stir the mixture into the prepared chopped apples.

Break the butter into small bits and mix into the apple pie mixture as little chunks.

The butter will melt and add flavor to this delicious pie filling.

Put all the ingredients into a saucepan on the stove top and cook over medium heat for about 10 minutes, just enough to soften and cook the apples a little.
