2 - 6oz cans crab meat
1 cup cooked, cooled rice
2 thinly sliced celery stalks
2 finely chopped green onions
4 tablespoons basil or oregano flakes
4 tablespoons pinenuts *optional
Juice of 1/2 lemon
salt and pepper to taste
1/2 cup mozarella cheese more or less
12 Campari Tomatoes (Campari are a smaller variety of tomato, usually about 2-3 inches in size)


In a bowl, combine the crab meat, rice, sliced celery and onions, pine nuts, basil or oregano flakes, juice of half a lemon, and salt and pepper.

Slice the tops off the tomatoes and scoop out the innards which you can stir into the crab stuffing.

Grate the cheese.

Fill the tomatoes with the prepared stuffing and place onto a baking tray. Put a little cheese on top of each tomato and place into a preheated 350 degree F. oven for 10-15 minutes, until warmed through and the cheese is melted.
