A great recipe for Cream Cheese Pizza topped with thin potato slices.
Potatoes
Preheat oven to 350 degrees.
Line a baking sheet with parchment paper.
Drizzle with 1 tablespoon olive oil.
Sprinkle with saltand fresh ground pepper.
Slice the potatoes very thin, about 1/8-inch thick and arrange on the baking sheet.
Place in oven and bake for 20 minutes or until potatoes are just beginning to brown.
Remove from oven and set aside until ready to use.
While the potatoes are baking, we will prepare the dough.
Dough
Dissolve yeast and sugar in hot water.
Let the dough sit for 8 minutes.
Meanwhile mix flour and salt.
Pour yeast mixture over flour mixture and mix well with a heavy spoon.
Turn onto floured surface and knead for 2 minutes.
Spread into a 12-14 inch rectangle.
Roll it out on a lightly floured counter top, transfer to a greased cookie sheet, stretching to the edges of the pan.
Sauce
Place the cream cheese, sour cream and grated mozzarella cheese into a mixing bowl and stir to combine.
Assembly
Preheat the oven to 450 degrees F.
Spread the cream cheese sauce onto the pizza crust.
Arrange the cooked potato slices onto the pizza and sprinkle on the fresh onions and thyme.
Slide the pizza into the oven and bake for 20-25 minutes or until the crust is crispy and done.
