This crostata recipe is filled with sausage, red peppers and herbs.
1 1/2 cups all purpose flour
1/8 teaspoon salt
6 Tablespoons butter, chopped
1 egg yolk
1 Tablespoon cold water
2 cups sausage, sliced
1 red pepper, diced
1 Tablespoon extra virgin olive oil
1/2 teaspoon salt
freshly ground black pepper
1 large tomato, chopped into 1/2-inch pieces
To make the pastry, In a food processor, combine the flour, salt and butter until mixture forms breadcrumb texture.
Add the egg yolk and enough water to form a soft dough.
Gently knead until smooth, wrap and refrigerate for 30 Minutes.
Preheat oven to 350 degrees f.
Combine all filling ingredients in a bowl and toss to coat with oil.
Roll pastry out to 1/8 inch flat and place on a large baking sheet.
Pour filling onto crust and fold pastry boarder towards filling, pleating the excess pastry as you go.
Bake 15-20 minutes until pastry is golden brown.
Allow to cool 5 minutes before slicing.
