Crunchy Chicken Fingers Recipe

These crunchy chicken fingers only take a very few simple ingredients and will get gobbled up so quickly. Serve with a a homemade dipping sauce and some fresh veggie sticks.

Ingredients

1 pound boneless, skinless chicken breast, cut into 1-inch thin strips
1 cup corn flake crumbs
1 Tablespoon fresh parsley, chopped
1/2 teaspoon salt
1/3 cup ranch dressing
1 teaspoon water
2 Tablespoons melted butter

(Serves 2)

Directions

Preheat your oven to 425ºF.

Line a baking sheet with parchment paper. Set aside.

Cut the chicken into 1 inch thin strips.

In a shallow bowl, combine cornflake crumbs, parsley and salt. Set aside.

In a separate bowl, combine dressing and water.

Working in a assemble line, dip the chicken into dressing mixture then dredge in the cornflakes.

Place breaded chicken strips on the prepared baking sheet and continue with the remaining chicken.

Drizzle a small amount of butter over each chicken strip.

Transfer baking sheet to the preheated oven and bake for 10-12 minutes, until chicken is just cooked through.

Serve hot.
