This easy chocolate mousse can be served all by itself, or with the ladyfinger cookies layered in.
1 cup bittersweet chocolate, chopped
2 Tablespoons butter
1/2 cup brewed strong coffee, cooled
3 large egg whites, at room temperature
1/8 teaspoon salt
3 Tablespoons granulated sugar
16 ladyfinger cookies
1/4 cup strong coffee for dipping
Have ready 6 serving cups
Melt the chocolate and butter in a metal bowl placed over a pot of simmering water, stir gently until melted.
Remove from the heat and allow to cool.
Whip the cream to soft peaks and stir in the coffee.
In a clean bowl, whip the egg whites with the salt until foamy, then gradually add the sugar while continuing to whip the whites until they hold a soft peak.
Fold the whipped cream into the cooled chocolate in 2 additions.
Fold in the whites all at once.
When you are ready to serve, add a layer of mousse to a cup, then dip 1-2 lady fingers quickly into the brewed coffee.
Place lady finger on top of mousse.
Repeat with mousse and lady fingers until the cups are filled.
