Easy Chocolate Muffins Recipe

This easy chocolate muffins recipe is so quick to throw together. Save half a cup of coffee when you brew it to have on hand when you make these tasty muffins.

Ingredients

1 1/2 cups all purpose flour
2 1/4 teaspoons baking powder
1/2 teaspoons baking soda
2 Tablespoons cocoa powder
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup milk or half and half
1/2 cup brewed coffee or espresso
1/4 cup grapeseed oil
1 large egg
1/2 cup chocolate chips

Directions

Preheat the oven to 350 degrees F.

Line with paper liners or greas a 12 hole muffin tin.

In a bowl, sift together the flour, baking powder, baking soda, and cocoa powder.

In a mixing bowl, using an electric mixer on low speed combine the sugars, milk, coffee, oil, egg, and vanilla extract.

With the mixer on low speed, add the flour mixture to the wet mixture. Don't overbeat. Stir in the chocolate chips.

Fill the muffin tins to 3/4 full and place into the preheated oven.

Bake 20-25 minutes or until a toothpick inserted into the middle comes out clean.

Remove to cooling rack and let sit 5 minutes, they remove the muffins from the tin onto the cooling rack.
