Easy Falafel Recipe

This easy falafel recipe is a good one to try. The base ingredient in a falafel is chickpeas. They taste good hot or cold and can provide the protein portion to your meal.

Ingredients

1 15 ounce cans of chickpeas, drained
1 medium onion, finely chopped
1 Tablespoon minced garlic
2 Tablespoons fresh parsley, finely chopped
1 teaspoon coriander
3/4 teaspoon cumin
1/2 teaspoon salt
2 Tablespoons flour
salt and pepper to taste
canola or vegetable oil for frying

Directions

Combine chickpeas, garlic, onion, coriander, cumin, salt and pepper (to taste) in medium bowl. Add flour and combine well.

In a medium mixing bowl, add the chickpeas, garlic, onion, coriander, cumin and salt and pepper to taste. Add flour and toss.

Using a potato masher, mash the chickpeas, making sure to blend the other ingredients into the mash.

Mash chickpeas, ensuring to mix ingredients together.

Once the mixture is thick and pasty, form small balls about 1 to 1 and 1/2 inches. Flatten slightly.

In a large skillet, heat 2 inches of oil to about 350 degrees F. Fry the patties for 3-5 minutes or until golden brown.

Fry in 2 inches of oil at 350 degrees until golden brown (2-5 minutes).
