This easy noodle soup recipe is a quick to throw together and the kids will love this one.

1 Tablespoon margarine or butter
1/2 cup chopped onion
1/3 cup sliced celery
8 cups chicken broth
1 cup peeled and sliced carrot
2 cups uncooked egg noodles
salt and fresh ground pepper
A few sprigs flat leaf parsley

Serves 2-4


Place the margarine into a large saucepan set over medium-high heat and melt the butter.

Add the onions and cook for 5 minutes until transparent.

Add the sliced celery and cook with the onions for another 5 minutes until tender.

Pour in the chicken stock and bring to a boil.

Add the carrots and cook for 6-10 minutes, until carrots are tender.

Add the noodles and allow soup to cook for another 7 minutes, until noodles are tender.

Season to taste with salt and pepper.

Garnish with a few flat leaf parsley leaves if desired.
