Pre-heat oven to 350 degrees F. Grease and flour shallow quiche tin with removable bottom.
Peel and slice peaches.
Combine sugar, and starch.
Pour water into saucepan, bring to a boil then squeeze in lemon juice.
Whisk in sugar starch mixture.
Remove from heat and allow to cool slightly.
To make the cake, Combine sugar, flour, half of butter, and milk into a bowl and mix until a smooth batter forms.
Pour into quiche tin. Arrange peach slices to cover entire cake slightly overlapping each other.
Mix melted remaining butter with egg white.
Pour sauce over top of peaches.
Bake for 20-25 minutes.
Remove from oven and allow to cool for 5 minutes before removing from tin.
