Extra Cheese Taco Casserole Recipe

Lets double up on the cheese and make this extra delicious taco casserole for that special weeknight meal. Great with veggies and dip!

Ingredients

Serves 6
1 Tablespoon olive oil
1 medium sized onion, chopped
2 cloves garlic, minced
1/2 teaspoon red pepper flakes
1 pound ground chicken or lean ground beef
2 Tablespoons Taco seasoning
1 can black beans, drained
1 cup hot salsa sauce
24 Tortilla Chips plus additional for serving
2 cups shredded cheddar cheese

Directions

Preheat the oven to 350F.

Lightly grease a baking dish with olive oil.

Heat the oil in a large skillet over medium heat. Add the chopped onions and cook for 4-5 minutes until soft and tender. Add the minced garlic, cook one minute. Add the red pepper flakes and the ground chicken or beef and cook, crumbling the mixture as it cooks. Cook until no pink shows.

Add the seasoning, beans and salsa sauce and cook for five minutes, stirring to combine as it cooks. Shut off.

Line the prepared baking dish with the taco chips, press them down to break them up into bite sizes.

Cover with the chicken/meat mixture. Sprinkle the cheese on top.

Place into the preheated oven and bake for about 20 minutes or until you see the cheese is melted and golden.

Remove from the oven and serve.

You can serve with extra chips, sour cream, olives, peppers and all the favorites that you enjoy with this type of meal.
