Cook the beef in a dutch oven until it has browned. Pour the cooked beef into a colander to drain the fat off. Set aside.
Heat the oil in the dutch oven, add the onion and garlic and cook until browned. Add the beef back in.
Stir in tomatoes, tomato paste, beer, broth, coffee, water, brown sugar, chili sauce, cumin, cocoa, oregano and ground red pepper.
Bring the mixture to a boil, then turn down and simmer uncovered for 1 hour.
Stir in all the beans and simmer for an additional � hour.
Sprinkle grated cheese on top when you serve.
