Frozen Blueberry Dessert Recipe
This frozen blueberry dessert is like a fancy popsicle, that you can have ready and waiting in your freezer for those hot days.
1 cup (6 ounces) fresh blueberries
3/4 cup sugar, divided
1 cup plain yogurt
1 cup heavy cream
Garnish with extra blueberries and mint leaves.
In a small sauce, boil blueberries and 1/4 sugar, using a spoon to crush until it is soft and syrupy.
Transfer to a bowl in fridge for 30 minutes.
In a medium bowl, whisk together 1/2 cup sugar, yogurt, and cream until sugar dissolves, about 2 minutes.
Pour yogurt and blueberry mixtures, alternating them, into ice-pop molds or paper cups, making 5 to 6 layers in each.
With a wooden skewer, swirl mixtures together.
Insert ice-pop sticks and freeze until solid, about 6 hours.
