Whisk together rice flour, cornstarch, sugar, salt and xanthan gum. Mix in milk, eggs and vanilla until well incorporated. Let sit for 10 minutes.
Preheat oil to 375F.
Using a large tipped funnel, pour batter into funnel over top of hot oil and make a design. Let fry for 2 minutes or until golden brown. Flip over and fry the other side for an additional 2 minutes or until golden brown. Place on a plate with some paper towel to soak up excess oil. Repeat this until batter is all gone.
Garnish with confectioner's sugar and serve hot.
