Good For You Chocolate Peanut Butter Balls Recipe

If you want to make a guilt free good for you treat here it is! Homemade chocolate peanut butter balls.

Ingredients

8 ounces organic salted peanuts
1 Tablespoon honey (or agave nectar)
Salt to taste
4 Tablespoons almond meal
4 ounces chocolate, semi-sweet or bittersweet Good quality dark chocolate 70% or higher
1 teaspoon coconut oil

Directions

Line a baking sheet with parchment paper and set aside.

Place the peanuts into the blender and mix on high speed until the peanuts are smooth and releasing their natural oil.

Add the honey and salt. Do a taste test and add more if you want.

Transfer the mixture to a mixing bowl. Add the almond meal. You may use more or less than the 4 tablespoons called for.

The mixture must be the consistency to roll into a ball.

If the mixture is not setting just place into the freezer for 10-15 minutes and try again.

When firm enough, use a melon scoop to make the balls and place them onto the parchment lined sheet. Place into the freezer for about 30 minutes to harden. Remove from freezer and if balls still need shaping use your hands to rolls and form.

Place the chocolate and coconut oil into a small saucepan and melt over low heat on the stovetop.Shut off.

Use a toothpick to stab a peanut butter ball and dip into the chocolate sauce to coat.

Place each dipped ball back onto the parchment paper and when done place into the freezer until set. If you have extra chocolate, double dip the balls.

Once set, remove from the freezer. These can be kept in a container with a lid.
