Grilled Skewers With Peanut Sauce Recipe
You will wish you made double the peanut sauce!
1 lb boneless pork shoulder ( or pork loin) / or chicken breast / or hard organic tofu
3 inch ginger, diced
1/2 garlic clove
4-5 sprigs cilantro, chopped
1/3 cup water
1 tsp soy sauce
1.5 tbsp peanut butter
1/3 cup sweet chili sauce
1 tbsp olive oil
lime wedges - to garnish
In a blender, combine all your sauce ingredients and blend to a smooth paste.
Place about 1/2 the mixture in a large bowl, reserving the rest for a dipping sauce.
Cut pork (or chicken or tofu) into 1 inch cubes and combine with the peanut butter mixture in the bowl; toss to coat.
Place the meat (or alternatives) on skewers, being sure not to crowd.
Grill (or bake in oven at 400F) until browned on all sides, about 5 to 8 minutes in total on grill or about 15-20 minutes in oven.
Serve with dipping sauce and lime wedges.
