This is a simple homemade mayonnaise recipe that is done using a blender. If you have run out of mayonnaise, or just want to make your own, it is worth giving it a try!
In a small bowl stir together the dry mustard, paprika and salt, add the oil and stir together with a fork.
Put the eggs and vinegar into the blender. Turn the blender to the lowest speed until the egg mix is combined. Leave the blender on and add the oil mixture in a slow, steady stream. Blend on low for 2-3 minutes.
The mixture will be very thick. Slowly pour in the lemon juice and mix in.
Store in a glass container with a lid. It will keep up to 4 weeks refrigerated. Like any mayonnaise, do not leave it out on the countertop.
For those that wonder about using olive oil, that is a very personal choice. Olive oil does impart a flavor into the mayonnaise that many do not care for. If olive oil is your oil of choice then go ahead and give it a try.
