1 1/2 teaspoons salt
4 1/2 cups all purpose flour

fresh parsley sprigs

Directions

Sesame Bread Sticks

Dissolve yeast in warm water in a large mixing bowl.

Add the oil, buttermilk, salt and 2 tablespoons sesame seeds.

Beat in 3-1/2 cups of the flour. Mix in enough of the remaining 1 cup of flour to form a soft, non-sticky dough.

Place dough on a floured surface and knead until smooth and elastic, about 6-8 minutes.

Measure the 2 teaspoons of olive oil into large bowl anduse your fingertips or a paper towel to wipe it around the entire interior of the bowl.

Place the ball of dough into the oiled bowl and turn the dough over to make sure all sides are well oiled.

Cover and let rise until doubled, about an hour or so. Punch down dough. Let rest for 10 minutes.

Turn dough onto a lightly floured surface; divide into fourths. Work with one portion of dough at a time, keeping remaining dough covered with plastic wrap.

Preheat the oven to 325° F.

Grease 2 baking sheets.

Divide each ball of dough into 16 individual pieces by cutting the dough in half again and again until you have 16 pieces of dough. First, roll each piece between your hands to form a log, roll each log on a flat lightly floured surface to form the bread sticks.

Place each breadstick onto the greased baking sheet. Leave space between the breadsticks.

Repeat the process until you have 32 breadsticks formed.

Beat egg and water; brush a little over each breadstick and sprinkle with more sesame seeds.

Bake for 25-30 minutes or until golden brown. Watch you do not burn them.

Remove to wire racks to cool.

* Note: Bake one sheet at a time. While you are baking the first batch, you can be rolling out and preparing the second batch.

Yield: 64 breadsticks
