This recipe for homemade tiramisu includes the homemade ladyfingers.
Lady Fingers
Preheat oven to 400F.
Line 2 baking sheets with baking parchment.
Whip egg whites until soft peaks start to form, add 2 tablespoons from the sugar, and continue to whip till stiff and glossy.
In a separate bowl, whip egg yolks and remaining sugar until thick.
Sift together flour and baking powder into another bowl.
Alternating between flour and egg yolks, fold into egg whites until everything is well incorporated, be sure not to over mix.
Put batter into a piping bag with a large round tip, and pipe 3 inch long fingers, with enough space in between for some growth.
Bake for 8 minutes, and let cool.
Mascarpone Filling
Using a pot filled with water and a bowl on top, heat up egg yolks, milk, and sugar. Stir mixture until it thickens about 8 to 10 minutes. Remove from heat.
In another bowl add mascarpone cheese and vanilla. Add in egg yolk mixture and whisk until smooth.
In a separate bowl whip the cream to stiff peaks. Fold 1/2 of the whipping cream into mascarpone cheese until its incorporated.
In a cup whisk together cold espresso, Kahlua and cocoa powder. Dip ladyfingers and line an 8 inch baking pan. Using half the mascarpone filling spread on top of ladyfinger. Dip more ladyfingers and layer on top of mascarpone filling. Then spread the rest of mascarpone filling on top.
Using the other half of whipping cream, pipe lines on top of tiramisu, and dust some cocoa powder on top. Serve.
