A Tummy warming recipe for homemade vegetable soup.
4 potatoes, peeled and cut into small squares
3 celery stalks, diced
2 carrots, peeled and diced
1 large onion, diced
1 red pepper, diced
2 cups chicken or vegitable stock
salt and pepper to taste
2 tbsp parsley
clean and cut all vegetables
rinse starch off potatoes and just cover potatoes with water in a large pot bring to a boil.
In a large fry pan, heat butter and cook onions and celery. until just soft.
Add vegitables to potato pot and add broth.
Add salt and pepper to taste.
Let simmer on low heat for 1 hour until all vegetables are tender.
