Sauce:
1 Tablespoon sweet chili sauce
2 Tablespoons tomato ketchup
1-2 Tablespoons honey
1 Tablespoon oyster sauce
2 Tablespoon light soy sauce
1/4 cup water

(Serves 2)

Directions

In a medium container with a tight fitting lid, combine the soy sauce, wine, sesame oil and sugar. Mix until well combined.

Add the chicken pieces.

Cover with a tight fitting lid and marinate in the refrigerator for at least one hour, up to over night. Turn the container occasionally to marinate evenly.

Sauce

In a medium sauce pan set over medium heat, combine the sweet chili sauce, ketchup, honey, oyster sauce, soy sauce and water.

Bring the sauce to a boil and then reduce to a simmer and cook until the sauce begins to thicken. Once thickened, set aside.

In a large ziploc bag, combine the flour and cornstarch. Carefully shake the bag to mix until well combined.

After the chicken has marinated, add a few pieces to the bag with the flour mixture. Gently shake the bag to coat the chicken with flour.

Remove chicken and set aside while you repeat with the remaining chicken pieces.

Heat olive oil in a large skillet set over medium-high heat.

Add the chicken pieces. Be sure to turn them to brown all sides and stir fry until cooked through.

Once all the chicken is cooked through, toss the hot chicken pieces with the sauce.

Serve along side a bed of rice, if desired.
