A Very tasty recipe for Italian amaretti. There are a light and delicious almond cookie.
Preheat oven to 300 degrees F, line a large baking sheet with parchment paper.
In large mixing bowl with a stand or hand mixer, beat egg whites until soft peaks form, beat in sugar, 3 tbsp at a time, until stiff peaks form. Beat in almond extract then fold in ground almonds.
Drop by generous tbsp or pipe using piping bag, 2 inches apart, onto baking sheets.
Bake 20 minutes or until firm to the touch and golden.
Transfer to a wire rack to cool completely.
