Italian Cream Cake Recipe by Cookie Madness

Ingredients

Cake:
1 teaspoon baking soda
1 cup buttermilk, room temperature
5 large eggs, separated and at room temperature
4 oz unsalted butter plus 1/4 teaspoon salt (omit salt if using salted)
1/2 cup shortening (3.5 oz)
2 cups granulated sugar
1 teaspoon vanilla
2 cups all purpose flour,
2/3 cup pecans, toasted and chopped
1 cup angel flake shredded, sweetened coconut ( 3.5 oz)

Frosting:
12 tablespoons unsalted butter, softened plus 1/4 teaspoon salt (omit if using salted)
12 oz cream cheese, softened
2 teaspoons vanilla
5 1/2 cups powdered sugar, not sifted (about 1 � pounds)
