Jam Muffins Recipe

This jam muffins recipe can be made with any of you favorites jams. Slice these muffins in half to discover a wonderful jam filled center.

Ingredients

Base
1 large egg
1/2 cup milk
1/4 cup vegetable oil
1-1/2 cup flour
1/2 cup sugar
2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon cinnamon

Filling
1/4 black cherry jam
1/4 cup apricot jam

Makes 12-28 short muffins

Directions

Preheat oven to 350 degrees F.

Grease or line a muffin tin.

Mix egg, milk, and oil in small bowl. In a large bowl, whisk the flour, sugar, baking powder, salt, and cinnamon. Add the wet ingredients to the dry ingredients and stir. Do not over mix.

Pour batter into muffin cups, filling each 1/2 full.

Bake for 10 minutes, and then remove from oven.

Use a clean finger or spoon to gently press an indent into the middle of the muffins.

Place a spoonful of jam into center of each muffin, pressing them down slightly.

Bake for another 10 minutes until golden brown.

Cool in muffin tin on a wire rack for 5-10 minutes.

Repeat with any remaining batter.

Serve warm.
