An easy recipe for gelatin stars with a delicious coffee flavor.

Ingredients

Coffee Layer
2 tablespoons of unflavored gelatin powder
1/2 cup cold water
3/4 cup cold coffee
1 1/2 cups milk (or coconut milk)
1 cup sugar
White Layer:
2 tablespoons of unflavored gelatin powder
1/2 cup cold water
3/4 cup water
1 1/2 cups milk (or coconut milk)
1 cup sugar.
Extra cinnamon or cocoa powder to garnish
Tools:
8 point cookie cutter star

Directions

Coffee Layer

In a medium-sized bowl, sprinkle the unflavored kosher gelatin over 1/2 cup of cold water.

Allow the gelatin to absorb the water for two minutes.

In a saucepan, whisk together the coffee, milk, and sugar and bring just to a boil.

Transfer the boiling mixture to the gelatin bowl and whisk until gelatin is fully dissolved.

Refrigerate until it cools to room temperature.

White Layer:

Meanwhile, in a separate bowl, sprinkle the unflavored kosher gelatin over 1/2 cup of the cold water and allow the gelatin to absorb the water for two minutes.

In a saucepan, whisk together 3/4 cup of water, the milk, and sugar and bring just to a boil.

Transfer the boiling mixture to the gelatin bowl and whisk until gelatin is fully dissolved. Refrigerate until it cools to room temperature.

Pour the coffee layer into a 9 x 12 rectangle high sided pan.

Refrigerate for about 30 to 45 minutes until gelatin is set, but still feels a bit sticky to touch.

Next, gently spoon the white mixture into the pan over the coffee layer. Refrigerate overnight until firm.

Dip the pan in warm (not hot) water for 15 seconds to loosen the gelatin. Using the cookie cutter, cut star shapes into the gelatin.

Gently peel away the excess gelatin and lift the star out of the pan.

Garnish with cinnamon or cocoa powder, and your choice of decorations.
