Lemon Chicken Skewers Recipe

These delicious lemon chicken skewers are the perfect meal for a backyard summer BBQ.

Ingredients

Serving Size – Approximately 8 skewers

1 1/2 pounds boneless chicken breasts, cut into 1 1/2 inch pieces
1 onion, chopped
2 Tablespoons extra virgin olive oil
Juice of 1 lemon
1 Tablespoon minced garlic
Salt and freshly ground black pepper
3 bay leaves, crumbled
1 Tablespoon rosemary or oregano leaves or 1 teaspoon dried oregano
Lime wedges
1 leaf lettuce for serving

Directions

Soak about 8 wooden skewers in warm water.

Meanwhile, prepare the chicken by cutting into 1 1/2 inch pieces.

To prepare the marinade, in a large bowl combine chop onion, olive oil, lemon juice, garlic, salt and pepper, bay leaves, and the marjoram, rosemary or oregano (or a combination of all 3); taste and adjust the seasoning if necessary.

Add the chicken pieces and marinate 30 minutes to an hour. You can also prepare chicken the day before and marinate overnight in the fridge.

After marinating, thread the chicken onto the pre soaked skewers and return to the fridge until you are ready to cook.

Preheat your grill or BBQ to a medium heat.

Broil or grill the skewers until the chicken is cooked through, 12 to 15 minutes, turning once or twice.

(Always make sure chicken is fully cooked. To check for doneness, slice into a piece of chicken with a knife; the center should be white and the juices should run clear.)

Serve on a bed of lettuce with lime wedges.
