Lemon Potatoes Recipe

This flavorful potato recipe will easily be the star of any meal.
1 lemon, juiced
1 Tablespoon vegetable or olive oil
1 Tablespoon margarine or butter
1 teaspoon salt
1 teaspoon pepper
Preheat oven to 375°F.
Have ready a 9x13 inch glass baking dish.
Scrub the potatoes well and slice them into wedges. Cut off any blemishes. Pat dry with a paper towel.
In a large bowl mix together the juice from the lemon, oil, melted margarine, salt, and pepper.
Place the potato wedges into the bowl and toss with marinade .
Spread the potatoes into the baking dish and place into the preheated oven.
Bake for 45-60 minutes until potatoes are tender and crispy.
Flip the potatoes once or twice during the baking process.
Remove from oven and serve hot.
