1 1/2 cups milk
2 Tablespoons all purpose flour
2-3 cups shredded white cheese of your choice
1/2 teaspoon salt
1/4 teaspoon powdered mustard

Directions

Pasta

Bring water to a boil over high heat in the pot.

Add the macaroni and a tablespoon of salt.

Cook about 8 minutes, until the pasta is al dente.

Drain and set aside.

Creamy Cheese Sauce

While the macaroni is cooking make the cheese sauce.

Pour one cup of the milk in the saucepan over medium heat to warm.

In a measuring cup, mix together the remaining 1/2 cup of milk and the flour until there are no lumps.

When you see the milk is warm and starting to steam, whisk the milk and flour mixture in.

Keep whisking gently until the milk thickens slightly to the consistency of heavy cream. This will take a few minutes.

Turn the heat down to low and stir in the salt and powdered mustard.

Add the shredded cheese a little at a time, stirring with a wooden spoon until you have added all the cheese.

Taste and adjust the seasonings as desired.

Remove the sauce from heat and pour the cheese sauce over the pasta. Stir in to coat the pasta evenly and serve.
