Mango Prawns Recipe

These mango prawns are marinated in a delicious mango sauce that is sweet and addictive.

Ingredients

Main Ingredients
6 wooden skewers
24 prawns, cleaned, peeled and deveined
2 Tablespoons mango juice, divided
1 chilli, finely chopped
2 Tablespoons honey
2 Tablespoons olive oil, plus more for greasing grill

Sauce Ingredients
1 Tablespoons brown sugar
6 Tablespoons white wine vinegar
2 Tablespoons soy sauce
2 Tablespoons Mango juice
2 garlic cloves, minced
2 teaspoons fresh ginger, grated
1 /2 red chilli, deseeded and finely chopped
salt and freshly ground black pepper

(Make 6 skewers)

Directions

Soak the 6 wooden skewers in a shallow dish of water for 20 minutes.

Meanwhile, in a large bowl, combine the prawns, 1 tablespoon of the mango juice, chilli, honey and olive oil. Mix together until well coated and combined.

Season with salt and fresh ground black pepper.

Cover and set the prawns aside in the refrigerator to marinate for 20 minutes, up to overnight.

Meanwhile, make the dipping sauce.

In a small saucepan set over medium-high heat, combine the brown sugar, vinegar, soy sauce and remaining 1 tablespoon of mango juice.

Bring to a gentle boil.

Add the garlic, ginger and chilli and allow to simmer for 3 minutes. Season with salt and fresh ground black pepper.

Set aside to cool. Once cool, taste and adjust seasoning, if necessary.

After the prawns have marinated for desired amount of time, thread 4 prawns onto each skewer.

Grease grill with olive oil, and heat your BBQ to 350ºF.

Once BBQ has come to temperature, carefully place the skewers on the grill.

Cook prawns until pink and completely cooked through, about one minute on each side.

Remove prawns from heat and serve immediately with the dipping sauce on the side.
