Maple Cake Recipe

This maple cake recipe makes a flavorful three layer cake that has a fluffy cream cheese frosting and is garnished with shredded coconut. Delicious!

Ingredients

Cake
2 3/4 cups all purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
3/4 cup unsalted butter, room temperature
1 cup granulated sugar
1/2 cup maple syrup
3 eggs
1/2 teaspoon maple flavoring
1 cup buttermilk
1/2 cup chopped walnuts

Frosting
1 cup cream cheese, room temperature
3/4 cup unsalted butter, room temperature
3 cups confectioners' sugar

Garnish
1 cup shredded coconut

Serves 6 - 8

Directions

Cake

Preheat oven to 325 degrees F.

Grease and flour 3 - 9 inch round cake pans with butter.

Whisk together flour, baking powder, baking soda, salt, cinnamon and nutmeg. Set aside.

In a separate bowl beat butter, sugar and maple syrup until well combined. Add eggs one at a time, beating after each addition. Mix in maple flavoring, butter milk, and dry ingredients and mix till well incorporated. Fold in walnuts.

Pour batter into prepared cake pans and bake for 25 - 30 minutes, or until an inserted toothpick comes out clean. Set to cool, once cool enough to touch turn cakes out of pans and let cool completely on a wire rack.

Frosting

Beat together cream cheese, butter and sugar until light and fluffy (about 5 minutes).

Assembly

Spread frosting in between each layer of cake, then spread on top and on sides. Press coconut on sides of cake and sprinkle on top. Serve.
