Margarita Cupcakes Recipe

1/4 cup lime juice
1 1/2 teaspoons lime zest
1 cup milk
1/4 cup grape seed oil
2 Tablespoons tequila
1/2 teaspoon vanilla
3/4 cup granulated sugar
1 1/3 cups all purpose flour
1/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt

1/4 cup butter
1 Tablespoon milk
3 Tablespoons lime juice
1 Tablespoon tequila
2 -2 1/2 cups confectioners' sugar

Makes 12 cupcakes



Preheat oven to 350 degrees F.

Line a muffin tray with colorful cupcake liners.

Beat together lime juice, lime zest, milk, oil, tequila, vanilla and sugar until well combined.

In a separate bowl whisk together flour, baking soda, baking powder and salt. Add to wet ingredients and mix until well incorporated.

Fill prepared muffin tin 3/4 full and bake for 20 - 22 minutes, or until an inserted toothpick comes out clean. Set to cool, once cool enough to touch turn cupcakes out of pan to cool.


Beat together butter, milk, lime juice, tequila, and sugar until light and fluffy.

Fill piping bag with icing and pipe on top of cooled cupcakes. Garnish with some sliced lime and lime zest. Serve.
