Margarita Lime Cake Recipe

A very yummy recipe for Margarita Lime Cake with tequila.

Ingredients

Cake
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 cup cocoa powder
1/4 teaspoon salt
1/2 cup unsalted butter, at room temperature
1 cup granulated sugar
2 eggs, at room temperature
Zest and juice of 2 limes
2 tablespoons tequila
1/4 teaspoon vanilla extract
3/4 cup buttermilk
To Brush the cake
2 tablespoons tequila
Frosting
1 cup butter, at room temperature
3 cups confectioners sugar
2 Tablespoon lemon juice
2 Tablespoons tequila
1/8 teaspoon sea salt

Directions

Preheat the oven to 325 degrees F. Grease an 8 inch cake dish.

In a medium bowl, whisk together the flour, baking powder and salt; set aside.

In an electric mixer on medium-high speed, beat the butter and sugar together until pale, light, and fluffy about 5 minutes.

Reduce the mixer speed to medium and add the eggs one at at time, mixing thoroughly after each addition, add the lime zest, lime juice, vanilla extract and tequila. Mix until combined.

Reduce the mixer speed low. Add the dry ingredients in three batches, alternating with the buttermilk. Mix only until incorporated.

Pour the batter into the cake pan and. Bake for 35 minutes or until a tester inserted in the center comes out clean.

Remove to a wire rack to cool slightly, Brush the top with the tequila. let cool completely.

To make the frosting, whip the butter on medium-high speed of an electric mixer using the whisk attachment for 5 minutes. Reduce the speed to medium-low, and gradually add the confectioners sugar, lime juice, tequila and salt mix on medium-high speed until incorporated and fluffy.

Frost cake and garnish, if desired, with lime zest, an additional sprinkling of salt and limes.
