Mexican Pulled Pork Tacos Recipe

This Mexican pulled pork taco recipe takes several hours for the pork to cook. You could start in the morning in your slow cooker and plan to eat the meal for suppertime.

Ingredients

1 6 pound pork shoulder
2 14 ounce cans diced tomatoes with green chilies
2 teaspoons paprika
2 teaspoons chipotle chile pepper
2 teaspoons garlic powder
1 teaspoon cumin
4 Tablespoons brown sugar
1 teaspoon salt
8 tacos
*Optional: fresh chopped white onions and cilantro

Directions

You will need a slow cooker.

Cut any extra fat off the pork shoulder and place it in the cooker.

In a mixing bowl combine the tomatoes with all the spices and brown sugar.

Pour the mixture over the pork.

Put the lid onto the slow cooker and turn the heat on to low. Cook for about 8 hours or until the pork is tender and pulls apart with a fork.

When cooked, place the pork onto a large cutting board and pull it apart.

Discard any bones and fat.

Using a strainer, transfer the liquid to a bowl.

Place the pulled pork into an oven safe dish and pour the sauce over. Cover with aluminum foil and keep warm until you serve.

Place pulled pork and your favorite fillings onto your tacos.
