Mexican Twice Baked Sweet Potato Recipe by Kim's Healthy Eats

Ingredients

2 or 3 medium sweet potatoes
1 can of black beans, rinsed and drained
1 can of corn, drained, or fresh off the cob or frozen,is the best
1 small onion, diced
1/2 cup red pepper, diced
1 small jalape�o, diced (if you like spicy)
1 clove of garlic, pressed
1 teaspoon chili powder
sprinkle of cumin
1 ounce light cream cheese
1/4 cup of greek yogurt or sour cream
salt and pepper to taste
handful of chopped fresh cilantro
1/2 cup of cheese, you could use cheddar, Monterey Jack, Colby� any of your favorites
