Mini Cheese Muffins Recipe

This mini cheese muffin recipe is made with cornmeal, yogurt and cheddar cheese.

1/4 cup plain greek yogurt
1/4 cup olive oil
1 egg
1/2 cup cheddar cheese ( shredded)
1/2 cup all-purpose flour
1 Tablespoon baking powder
1/2 teaspoon salt
1 cup cornmeal

Makes about 12 muffins


Preheat oven to 325F.

Grease a muffin pan with oil

In a bowl combine yogurt, oil, and eggs. Mix in cheese, flour, baking powder, salt, and cornmeal until well incorporated.

Fill muffin cups about half way, and bake for 14 - 18 minutes, or until an inserted toothpick comes out clean. Serve muffin warm with some butter.
