Mini Chocolate Loaf Cakes With Ganache Recipe

These delicious mini chocolate loaf cakes will fill the house with an irresistible aroma when they are baking in the oven.

Ingredients

Chocolate Loaf Cakes:
1/2 cup cake flour
1/2 cup granulated sugar
1/4 cup unsweetened natural cocoa powder
1/2 teaspoon baking soda
1/8 teaspoon salt
4 tablespoons butter, at room temperature
1/4 cup buttermilk
2 tablespoons lightly beaten egg
1/2 teaspoon vanilla extract
1/4 cup cooled brewed coffee
1/4 cup chocolate chips

Ganache:
2 oz semisweet chocolate, chopped (or chocolate chips)
2 oz heavy cream

Garnish:
1/2 cup chopped almonds

Directions

Chocolate Loafs:

Preheat the oven to 325F.

Grease two 3x5inch mini loaf pans with butter and lightly coat the bottom of the pans with a dusting of cocoa powder.

Stir together the flour, sugar, cocoa, baking soda and salt in a mixing bowl.

Add the butter and work it into the flour with the back of a spoon to coat with flour mixture and combine.

Add the buttermilk. Use an electric mixer on medium speed to beat until smooth. Scrape down the sides as needed.

In another bowl, beat together the egg, vanilla and coffee.

Add in increments to the batter, stirring in by hand until mixed. Stir in the chocolate chips.

Divide the batter between the two pans.

Place the pans into the preheated oven and bake for about 45 minutes or until a toothpick inserted in the center comes out clean. Remove from the oven and place to cool on a wire rack for about 10 minutes. Remove the cakes from the pans onto the cooling racks and let cool completely.

Ganache:

Place chocolate into a heatproof bowl.

In a medium saucepan, heat cream over medium heat until steaming. Don't boil the cream.

Pour the hot cream over chocolate, let sit for one minute, then whisk until smooth.

Drizzle over the chocolate loafs while it is warm.

Sprinkle the chopped almonds on top.
