Mini Strawberry Cheesecakes Recipe

Make these mini strawberry cheesecakes for a tasty dessert when you have a larger crowd. The recipe makes 24, 2-inch portions.

Ingredients

Crust
2 1/4 cups crushed graham wafer cookies
1/4 cup granulated sugar
1/2 cup butter, melted
1 egg

Filling
2 cups cream cheese, softened
1 cup granulated sugar
2 teaspoons vanilla extract
2 large eggs
1/2 cup sour cream
2 Tablespoons all purpose flour

Garnish
1 pint fresh strawberries
1 jar strawberry jam

(Makes 24)

Directions

Crusts

Preheat oven to 350 degrees F.

Mix together in a bowl crushed graham wafer cookies, sugar, melted butter and egg until well combined. Press into the bottom of 24 mini cheesecake pans.

Bake crusts for 8 minutes, set aside to cool.

Filling

Use an electric mixer to beat the cream cheese, sugar, vanilla, eggs, sour cream and flour until well combined. Pour into prepared crusts and bake for an additional 16 - 18 minutes or until cheesecake has set. Set to cool, then chill.

Garnish

Cut ends off strawberries and cut them in half. While your doing this heat up strawberry jam until smooth and a bit runny. Place strawberry halves in jam, set to cool. Top off chilled cheesecake with strawberry.
