Ingredients

5 Tablespoons butter, at room temperature
1/2 cup granulated sugar
1/2 cup brown sugar, firmly packed
1 large egg
2 egg whites
1 teaspoon pure vanilla extract
1 1/2 cups mashed, very ripe bananas
1 3/4 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 cup heavy cream
1/3 cup walnuts, chopped
1/3 cup walnut halves

Directions

Preheat the oven to 350F.

Grease a 9x5x3 inch loaf pan lightly with butter.

Place the butter into a large mixing bowl and beat until creamy with an electric mixer.

Add both the sugars and beat in.

Add the egg, egg whites and vanilla and beat in.

Add the banana and beat in.

In another bowl stir together the flour, baking soda, salt, and baking powder.

Add the flour mixture to the butter mixture, alternately with the 1/2 cup heavy cream and mix in well.

Add the 1/3 cup chopped nuts to the batter and mix in well.

Pour the batter into the prepared baking pan.

Sprinkle the walnut halves on top.

Place into the preheated oven and bake for 1 hour and 15 minutes.

Test by inserting a toothpick into the center of the loaf. If it comes out clean it is done.

Remove from the oven and let the pan sit on a cooling rack for 10 minutes.

After 10 minutes, remove the banana bread directly onto the cooling rack.

This is especially delicious served warm.

Any leftovers should be wrapped in plastic wrap and left on the counter top.
