No Meat Lasagna Recipe

This no meat lasagna recipe is great for the vegetarian. It is simple, tasty and you will hope there are leftovers.

9 lasagna noodles, parboiled or use oven ready noodles
15 ounces ricotta cheese
1/2 cup parmesan cheese, grated
2 eggs
1 (26 ounce) jar pasta sauce
2 cups mozzarella cheese, shredded


Preheat the oven to 350 degrees F.

Have ready a 9x13 inch baking dish.

In a bowl, stir together the ricotta, parmesan and the eggs.

Spread a layer of sauce in the bottom of the baking dish.

Follow with 3 noodles,

Follow with half the cheese mixture and another layer of noodles.

Follow with the remaining cheese mixture and a little sauce.

Follow with top layer of noodles, the remaining sauce and the mozzarella cheese.

Cover the baking dish with aluminum foil and bake for 30 minutes.

Remove the foil and bake another 10-15 minutes, just long enough to brown the cheese.

Let the lasagna sit for 10 minutes to set before cutting into it.
