Orange Grand Marnier Fruit Cake Recipe

Even the non fruit cake lovers will be excited about this tasty cake.

Ingredients

4 ounces cherries (red and green), coarsely chopped
4 ounces currants
4 ounces golden raisins
4 ounces candied peel
1/3 cup + 1 Tablespoon fresh orange juice
1/3 cup + 1 Tablespoon Grand Marnier
1 Tablespoon orange zest

1 cup butter, softened
3/4 cup sugar
4 eggs
2 1/4 cup all purpose flour
1/3 cup + 1 Tablespoon Grand Marnier (to drizzle)

Directions

Soak fruit over night by mixing the juice and grand marnier and orange zest.

The next day, preheat oven to 275F.

Line an 8 inch square pan with parchment paper.

Cream butter and sugar until light and creamy.

Add eggs one by one, beating well after each addition.

Sift flour into the butter mixture and beat on low speed until smooth.

Fold soaked fruits and remaining liquid into the batter.

Pour batter into pan, level and bake for 1.5 hours.

Remove cake from oven and immediately drizzle Grand Marnier over hot cake.

Let cool before wrapping or serving.
