Oven Roast Beef Recipe

This oven roast beef recipe will help the beginner cook to prepare a successful dinner.

Ingredients

Serves 10

3 pound lean top sirloin premium oven roast
5 garlic cloves, minced
1 teaspoon salt
1 Tablespoon olive oil
3/4 teaspoon pepper
1/4 teaspoon dried thyme
1/4 cup red wine or sherry (optional)
2 cups beef broth
2 Tablespoons all-purpose flour

Directions

Preheat oven to 450 degrees F.

In a mixing bowl, mash the garlic with the salt until pasty, then mix in 1 Tablespoon of oil, 1/2 teaspoon of the pepper and thyme.

Spread the garlic mixture onto the roast.

Place a drizzle of oil into the roaste pan. Add roast to the pan.

Cook the roast, uncovered in a roasting pan, for 25 minutes.

Without opening the oven, reduce the heat to 325 degrees F and continue roasting for 80 minutes.

Thermometer should read 140 degrees F for medium-rare or 155 degrees F for medium.

Move the roast to a cutting board and loosely cover with foil. Let stand 10 to 15 minutes before carving. Reserve juices.

While the roast is standing, put roasting pan over medium-high heat and add wine (if using), scraping the browned particles from the bottom.

Add the broth, the reserved juices from the roast and the remaining pepper.

Bring to simmer, stirring.

While simmering, whisk the flour with 1/4 cup water and blend into the gravy mixture.

Reduce heat and simmer for 3 minutes or until thickened. Serve with roast beef.
