This is a classic simple recipe for a fried cabbage with crispy bacon bites.
Cut the bacon into pieces about 1-inch and cook in a large cast iron skillet over medium heat until the bacon is crispy. Remove the cooked bacon to a plate lined with paper towels. Set aside.
Set the onions into the skillet and let them cook in the bacon fat for 5 minutes. If you used a very lean bacon and there is not enough grease for cooking add a tablespoon of olive oil.
Add the chopped cabbage to the pan and cook for 10-15 minutes over medium heat, stirring occasionally until the cabbage has softened. Add the apple cider vinegar and sugar and stir in, cook for one minute. Stir in the bacon pieces. Season with salt and pepper to taste and serve.
