Parmesan Crusted Chicken Recipe

This parmesan crusted chicken is a simple tasty method of baking chicken breasts.

Ingredients

Parmesan Crusted Chicken
1/2 cup hellmann mayonnaise
1/4 cup grated parmesan cheese
4 boneless skinless chicken breasts, cut in halves
4 teaspoons Italian seasoned breadcrumbs

Italian Seasoned Breadcrumbs (if you want to make your own breadcrumbs)
8 slices white bread
1/2 teaspoon salt
1 teaspoon Italian Seasoning
1/2 teaspoon onion powder
1/2 teaspoon garlic powder

Directions

Parmesan Crusted Chicken

Preheat oven to 425 degrees F.

Line a baking sheet with parchment paper.

In a bowl, combine the mayonnaise and the parmesan cheese.

Use a pastry brush to spread the mixture onto each piece of chicken, then sprinkle and pat on the bread crumbs.

Bake for 20 minutes or until there is no pink showing in the chicken breasts and the coating nice and crispy

Italian Season Breadcrumbs

If you plan to make you own breadcrumbs you need to do ahead of when you want to make the chicken.

Place 8 slices of bread on a half sheet cookie sheet, if you house is dry allow the bread to dry out. If your house is humid you need these quickly place the bread into a 200 degree oven until the bread has dried out, and then flip the bread over and allow the bread to dry out on the other side. This should take 5 to 7 minutes on each side.

Crumble bread into a bowl and add salt. Rub the Italian Seasonings between your hands to release the aromatic oils and then place those into the bowl. Add onion powder, and garlic powder if desired. Stir to combine. Store in an air tight container.
