Ingredients
For the Cupcakes:1 teaspoon baking powder
1/2 teaspoon bicarbonate of soda
1/2 teaspoon fine sea salt
225g cake flour
1/4 cup smooth peanut butter
2 tablespoons of vegetable oil (I used safflower)
3/4 cup light brown sugar
2 eggs
1 cup mashed banana
3 tablespoons milk
2 teaspoons vanilla extract
For the Ganache:
100g dark chocolate chopped
1/4 cup smooth peanut butter
1/3 cup cream
1 tablespoon light corn syrup
85g unsalted butter, chopped
Crushed roasted peanuts for sprinkling
