Poached Salmon Recipe

Flavorful poached salmon, this simple and delicious recipe is great served with potatoes as a side.

Ingredients

2 Tablespoons olive oil
1 Tablespoon butter
1 (2 lbs) salmon fillet, portioned
1 lemon, halved
3 Tablespoons dill, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup white wine
1 medium onion, sliced

Directions

Heat a large skillet to medium-low heat, add the olive oil and butter just to melt.

Arrange the salmon pieces, skin side down.

Squeeze the lemon over the fillets.

Sprinkle the tops of the salmon with the dill, salt, and pepper.

Pour in the wine, to about halfway up the sides of the filet.

Place the onions around the fillet in the liquid.

Bring the liquid to a high simmer, then reduce heat to low.

Cover and let simmer for 5 minutes.

Remove the cover and spoon the liquid over salmon. Do not turn fillets.

Cook 10 to 15 minutes, spooning liquid over top every few minutes until salmon is firm and no longer translucent.
