These homemade pork meatballs are glazed in a sweet and sour sauce.
Pre-heat oven to 375F.
In a large bowl, beat egg and then stir in breadcrumbs.
Add pork, garlic, onion, carrot, salt and pepper and mix thoroughly with hands.
Using hands, form pork mixture into 1-inch balls.
Bake on a foil-lined baking sheet for about 15 minutes (until meatballs are no longer pink inside.)
Meanwhile, in a medium saucepan, cook onion and garlic for about 4 minutes.
Add pineapple juice, ketchup, vinegar and cornstarch and mix thoroughly.
Bring to a light boil, reduce heat and simmer about 5 minutes until sauce thickens.
Add meatballs and serve over rice or with mashed potatoes.
Note: these meatballs can be made ahead of time, and frozen until ready to use.
