Potato Arugula Salad Recipe

This potato arugula salad is served warm and is a tasty easy dish to prepare.

Ingredients

Salad
4-6 potatoes( 2 lbs)
4 radishes, sliced
arugula, rinsed and stemmed

Dressing
1 garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon pepper
3 Tablespoons cider vinegar
1/2 teaspoon Dijon mustard
1 Tablespoon minced fresh thyme or 1 teaspoon dried
1/4 cup olive oil

Directions

Scrub and peel the potatoes.

Place the potatoes into a saucepan and put enough water to just cover.

Bring to a boil and cook for about 15-20 minutes until cooked but still firm.

Drain the water and let the potatoes cool.

Slices into 1/4 inch thick rounds.

In a small bowl whisk the dressing ingredients together.

Place the potato rounds, sliced radishes and arugula into a large mixing bowl. Add the dressing and gently toss and serve right away.
