Peheat your oven to 400 degrees F.
Line your baking trays with parchment paper and drizzle with olive oil.
Begin by peeling the potatoes. Wash and dry them and if there are any dark spots, cut them off.
Use a sharp knife to slice the potatoes into very thin circles.
Begin placing your potato rounds onto the baking sheet, into as many layers as needed.
Place the potatoes into the oven and bake 15 minutes to begin with while you prepare the bacon.
Remove packaging and cut into tiny bits.
In a large skillet, cook the bacon until crisp.
Use a slotted spoon to remove the bacon onto a plate lined with paper towels. The paper towels will absorb any excess fat.
Open the oven and mix the bacon bits gently into potatoes.
Cook for another 15-20 minutes until potatoes are tender and crunchy on top.
Season with salt and pepper.
