Potato Croquettes look impressive, but they are very easy to make and a nice variation for a potato dish.
Combine mashed potato, onion, egg, cheese, and parsley in medium bowl; mix thoroughly.
Shape into 8 croquette logs. Refrigerate for 15 minutes.
Spread bread crumbs onto waxed paper.
Dip croquettes in crumbs, turning to coat evenly; set aside.
Heat vegetable oil in large skillet on moderate heat. Place croquettes in hot oil; cook about 4 minutes, turning to brown on each side. Serve hot.
