Potato Dough Rolls Recipe

A very yummy recipe for potato dough rolls filling with ham and spinach.

Ingredients

Dough
1/3 cup mashed potatoes
1/2 cup butter, melted + more for brushing on
1 1/3 cups milk
1 egg
1/3 cups granulated sugar
1 1/3 teaspoon salt
3/4 teaspoon baking powder
1/2 teaspoon baking soda
4 cups bread flour
2 1/4 teaspoon yeast
filling
1/4 cup butter, at room temperature
2 cups thick sliced ham
2 chicken breasts, cooked and chopped
1 1/2 cups spinach
2 cups shredded cheese
To serve
1 large onion, diced
2 teaspons butter
1 cup finely chopped green onions

Directions

Combine together mashed potatoes, melted butter, milk and egg. Heat in microwave for 25 seconds. Add to bread machine.

In a separate bowl, mix together sugar, salt, baking powder, baking soda and flour. Once mixed add on top of wet ingredients in bread machine.

Add yeast on top of dry ingredients.

Put the bread machine on dough cycle and push start. After finished, let the dough rise a bit in the machine.

Roll out dough from one ball into a large rectangle

Brush with melted butter.

Spread the rolled out dough with the butter.

In the center place the ham, spinach, chicken and cheese.

Roll the dough up, pinching the seam to seal. Place on a lightly greased baking sheet and cover with plastic wrap. Let rise until nearly doubled.

Preheat oven to 350 degrees F

Bake for 20 minutes, until lightly browned.

While roll is baking, fry onions and butter at medium heat until browned and cooked through.

Slice the roll into about 1-inch segments. sprinkle with fried onions and green onions.
